Ashton Gillotte, a defensive end from Louisville, has made significant strides since arriving as a three-star recruit from Boca Raton, Florida. At Boca Raton High School, Gillotte was a four-year starter and two-time team captain, leading his team to a state championship game appearance and earning all-county honors in 2019. He committed to Louisville over offers from several other programs, including Duke, Maryland, and Vanderbilt.

At Louisville, Gillotte's production increased each season. As a freshman in 2021, he recorded 19 tackles, 8.0 tackles for loss, and 4.0 sacks. His sophomore year saw improvement with 23 tackles, 7.0 tackles for loss, and 6.0 sacks. Gillotte's breakout junior season in 2023 was his most impressive, as he led the ACC with 11.0 sacks while adding 14.5 tackles for loss, 45 total tackles, and three forced fumbles.

Gillotte's dominant 2023 performance earned him First-Team All-ACC honors and Second-Team All-American selections from Walter Camp, USA TODAY, Sports Illustrated, and The Athletic. He was also named to the ACC All-Academic team and selected as a first-team CSC Academic All-American. Gillotte enters his senior year ranked 10th in Louisville history with 22.0 career sacks.

  • Made Bruce Feldman's Freak's List - ranked #58. He wrote "The 6-2 Gillotte has added a dozen pounds or so and is now up to 276 but still has hit 19.9 mph on the GPS and vertical-jumped 36 inches. He power-cleans 390, but strength coach Ben Sowders said he could probably do 405. “He’s so explosive.”"
